… never has the term ‘the apple doesn’t fall far from the tree’ been more applicable than to our local Sainsbury’s supermarket this month because some of the delicious and quite varied range of apples they have on sale are from the fair county of Lincolnshire… I get a certain thrill going into the bigger stores and finding Lincolnshire produce, it tickles me a little to see the premise of ‘locally sourced’ in action on such a grand scale… I also love the variety of apples we now have in the store and I get very excited when the russets come in… they are my favourite and their cheeky cross-over between apple and pear makes for delicious eating and a more intriguing baking…
a very simple apple cake
this months random recipes and also the brilliant new bloggers challenge shop local, hosted by Elizabeth from Elizabeth’s Kitchen, celebrates everything local… my challenge was to then randomly find a recipe with apples in it… i’ve had a copy of the Mary Berry new Aga Cookbook for a while and never cooked from it and what with all the Great British bake-off fervour around at the moment I thought it the ideal book to use… the recipe is very simple and ultimately very effective… I was pleased with the results and glad to have a new apple cake recipe to add to the repertoire…
225g self-raising flour
1 teaspoon baking powder
225g caster sugar
2 large eggs
1/2 teaspoon almond extract
150g butter – melted
250g apples – any kind, peeled cored and thickly sliced
pre-heat the oven to 160C and grease and line a 20cm loose-bottomed baking tin
place all the ingredients except for the apples, into a large bowl and mix together, then blend for one minute using an electric hand mixer
dollop half the mixture into the cake tin and smooth out, then arrange apples onto this. Now dollop on the rest of the cake batter, smooth out and bake for 1 hour or until golden – set aside to cool.
eat and of course, enjoy!

Saw this on your blog roundup and decided to poke around in the archives. Love it. So simple but yes never fails to delight. And all I want in a cake, really- moist (I hate fluffy airy sponges), not too sweet, a bit of tang from fresh fruit. Nice twist using almond extract instead of the usual vanilla or cinnamon.. although.. I MUST have cinnamon with apple anything.. 😉

Apples are very popular in this round of RRs aren't they? I suppose it's the season for you. Like the cakey look and the idea of the apple slices in the middle rather than on top.
