Curried Yoghurt BBQ Chicken Thighs
AD | If truth be told I really don’t care for BBQ’s. I never really have. Don’t get me wrong, I love the concept of eating al fresco, I’d just rather cook it all in the kitchen and then take it outside. Also, BBQ’s can be a proper faff to prep and a pain in the arse to clean. But when the wonderful folk at Char Broil sent me this new Performance PRO 3-burner with TRU-Infrared how could I say no? Just look at this beauty!
An oven outside
This BBQ has so many features it’s gonna take me a few goes to use them all but what particularly love is that you can treat it just like an oven. The closable lid with it’s temperature gauge allows you to contain the heat inside, which is great when cooking bone-in chicken. It also comes with a swap-out hot plate for one section of grills which you can do so much with such as fry eggs and caramelise onions.
What’s really converted me though is how simple it all is to use. No messing around with coals or having to prep bits and pieces here and there. It can all be done at the grill and it really is like having your kitchen, just outside.
Curried Yoghurt BBQ Chicken Thighs
For my first use of the grill, I’m making chicken thighs of course and this curried yoghurt marinade is superb. Yoghurt has amazing tenderising properties and this marinade with its mellow spices and hit of sweet marmalade is so tasty. If you’re worried about cooking the chicken all the way through then use boneless thighs.
I’m serving it with a light and fruity Malbec Rose from the Beefsteak Club which is the perfect accompaniment with its summery vibes. It has a lovely citrus vibe going on which pairs so well with the yoghurt and marmalade marinade.
- 6 – 8 chicken thighs
- 3 tablespoons Greek yoghurt
- 1 teaspoon curry powder
- 1 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1 tablespoon marmalade
Place the marinade ingredients into a bowl and stir well. Add the chicken thighs and get your hands in and massage the marinade into the flesh. Place in an air tight container and pop in the fridge for at least an hour if not overnight.
Cook them on a medium grill for at least 8 mins on each side until the skin is crispy and the flesh in white. Close the lid on the BBQ for the extra smoky flavour and to lock in the moisture.
